Methi Bhaji Poori

As the chill of the winter month sets in, our hunger has increased, and these savoury snacks are the perfect way to “keep warm” with fenugreek which is known to have warming properties. Adding fenugreek leaves (methi bhaji) along with all the spices to any wheat-based product helps to improve the digestibility of the wheat to unlock it’s nourishing and building properties.

 

Ingredients

  • 1 cup stone ground white bread flour

  • 1 cup stone ground brown bread flour

  • 2-3 Tbsp ghee/ coconut oil

  • 1 tsp salt (or to taste)

  • 1/2 tsp turmeric powder

  • 1/2 tsp cumin powder

  • 1/2 tsp cumin seeds

  • 1/2 tsp ajwain seeds

  • ½ tsp cayenne pepper

  • ½ tsp paprika

  • 1/2 cup fresh fenugreek leaves or dried kastoori methi

  • 1/2 cup loosely packed, chopped fresh coriander leaves

  • 1/4 cup sesame seeds

  • Hot water to bind

  • Coconut oil to fry

 

Method

  1. Sift flour and add ghee/oil to form a crumb-like texture.

  2. Add spices, leaves and seeds.

  3. Bind with hot water and knead to form a soft dough.

  4. Divide into 4 equal balls.

  5. Roll each ball into large circles.

  6. Cut into diamond shapes with a cutter.

  7. Deep fry on medium heat in coconut oil.

  8. Keep turning for even cooking till golden and crisp. Drain on paper towel.

  9. Allow to cool completely before storing in an airtight container.
