Veggie Fritters with Tomato Relish
Another great recipe to try when you have limited time or just want something that’s easy to make, but still packed full of good stuff!
Veggie Fritters
Ingredients
1 can (410g) of creamstyle sweetcorn
1 medium-sized potato, peeled & grated
1 medium-sized carrot, peeled & grated
3 medium-sized zucchini, grated
Pink Himalayan salt to taste
1 tsp cayenne pepper
1 tsp fresh green chilli, minced
1 tsp fresh garlic, minced
1/2 tsp cumin seeds
1/2 cup chickpea flour
1/2 cup rice flour
1 Tbsp flax flour
Coconut oil to fry
Method
Combine all the vegetables with the sweetcorn in a large bowl.
Add spices and mix well.
Sift flours together in another bowl, then add to the vegetables and mix.
Use this batter to form medium-sized fritters that look like mini flapjacks.
Fry in coconut oil in a non-stick frying pan set on medium heat.
Once you see bubbles come through your batter on the first side, you’ll know it’s ready to flip over to cook the other side.
Tomato relish
Ingredients
3 Tbsp coconut oil
½ medium-sized red onion, sliced thinly
2 medium-sized chopped tomatoes
Pink Himalayan salt to taste
½ tsp cayenne pepper
½ tsp smoked paprika
½ tsp white pepper
½ tsp garlic flakes
¼ tsp brown sugar
A handful of freshly chopped coriander
Method
In a small pot, fry the red onion on medium heat in coconut oil.
Once onions are translucent, add tomatoes with spices and simmer on a low heat while you're making the fritters.
Garnish with chopped coriander.
